Pumpkin Stew Bowls

2 pounds stew meat
1 large onion, chopped
2 cloves garlic, minced
3 tablespoons olive oil

2 large chopped tomatoes
1 large green bell pepper, chopped
1 tablespoon salt
1/2 teaspoon pepper
1 teaspoon sugar
1 cup dried apricots
3 white potatoes, peeled and diced
3 sweet potatoes, peeled and diced
2 cups beef broth
1 medium pumpkin
butter

1 1/4 cup dry sherry
1 1 pound can corn, drained

Brown stew, onion, garlic in olive oil. Add next 9 ingredients. Cover and simmer 1 hour. Clean pumpkin, brushing with butter, salt and pepper. Stir sherry and corn into stew and put in pumpkin shell. Place in shallow pan, bake 325 degrees (1 hr). Serve out of pumpkin.
