1 yellow cake mix. 1 square of butter 2 (or 3) eggs 2/3rd c sugar 1 cup can milk 1/4th tsp salt 1 large can pumpkin 1 and 1/2 tsp pumpkin pie spice Reserve 1 cup of the yellow cake mix. Melt 1 square of butter in oblong (9x13) pan. Pat cake mix in pan. In med mixing bowl, mix 2 eggs, 2/3rd c sugar, 1 cup can milk, 1/4th tsp salt, 1 large can pumpkin, 1 and 1/2 tsp pumpkin pie spice. Pour in pan. To remaining cup of the cake mix add 1/2 c sugar, 2 Tlbs butter. Sprinkle over filling. Bake 40-45 min. at 350 (or a little longer if using 3 eggs) Top with whipped cream or Cool Whip. |
