Here is another one my kids and grandkids really love: Combine in bowl and beat 'til creamy: 1 cup (2 sticks) butter, softened 1 cup sugar 1/2 cup packed brown sugar Add: 1 egg 1 15 ounce can pumpkin 2 tablespoons orange juice 1 teaspoon grated orange peel Stir in: 2 1/2 cups flour 1/2 teaspoon baking soda 1/2 teaspoon salt Add 1/2 cup chopped nuts. Drop by spoonfuls on ungreased cookie sheet. Bake in preheated 375 degree oven for 12 to 14 minutes. Cool completely on wire rack. If desired, glaze cookies with an orange glaze of 1 1/2 cups sifted powdered sugar and 1/2 teaspoon grated orange rind with 2 to 3 tablespoons orange juice. These are soft cookies and easy for little ones to eat. |
